Sweet potato casserole has forever and always been my favorite holiday dish. Anyone else?
The fluffy mashed sweet potatoes infused with butter and salt, topped with a crunchy, buttery, cinnamon-y, maple-y oat streusel and baked until the crumble is golden brown and the sweet potato is almost candied is almost too good to be true.
And now all of that flavor is packed into my own individual serving size Mini Sweet Potato Casserole Boat. All that crunchy, sweet, butteriness is mine, alllll mine.
How to make Individual Sweet Potato Casseroles Right In The Sweet Potato:
I had been dreaming about this recipe idea for years, but avoided making them because it seemed complicated. Boy, was I ever wrong! These boats are as easy as can be.
First, you want to bake halved sweet potatoes with the cut side down until they are fork tender, which should run you about 30 minutes.
While they are baking away, use that time to stir together the oat and pecan crumble. It is bursting with cinnamon, maple, and has just the right amount of salt to make the flavors sing.
Take a fork and gently mash the insides of the sweet potatoes. This is essential for creating little crevices and crannies for our dairy free butter to melt and pool into, infusing our mini casseroles with flavor.
Top them with crumble and back into the oven for a quick 20. Out they come all golden and crunchy and bursting with more sweet potato casserole than you could dream these little boats could hold.

Description

Ingredients
- 4 sweet potatoes, halved lengthwise
- 2 tablespoons avocado oil
- ½ teaspoon salt
- 2 tablespoons dairy free butter
For the streusel:
- ⅓ cup quick oats (gluten free, if needed)
- ⅓ cup chopped pecans
- ¼ cup almond meal
- 2 tablespoons melted coconut oil
- 2 tablespoons maple syrup
- ½ teaspoon cinnamon
Instructions
- Preheat the oven to 375 degrees. Line a baking sheet with parchment paper.
- Line the sweet potatoes up the baking sheet. Drizzle them with the oil and salt. Rub this into both sides of the sweet potatoes to coat them well. Bake for 30 minutes
- Add all the streusel ingredients into a bowl and stir to combine.
- Once the sweet potatoes have baked, remove them from the oven and flip them cut-side up. Use a fork to gently mash the inside of the potatoes without going deep enough to puncture the skin. Top each potato with a pat of vegan butter and use the fork to spread the butter evenly over the potato. Top with streusel and bake for another 20 minutes. Serve and enjoy!

These are soooo simple yet soooo delish. I may have had some marshmallows on hand and sprinkled some on last five or so minutes of baking. Oh my. I will likely make these repeatedly forever more.
