Tomato Ricotta Toast

There is something about toast!

The crunch of golden brown bread paired with a creamy spread like mild and rich ricotta with juicy and sweet tomatoes is a perfect match. Top it with flaky salt, course pepper, fresh herbs, and another drizzle of olive oil and this 5 minute meal just can't be beat!

Ingredients and Substitutions:

  • Good bread - think a rustic loaf with a nice crusty exterior and fluffy center, like a sourdough. Or use this artisan gluten free bread.
  • Olive oil - something good! The flavors will come through.
  • Ricotta - store bought ricotta or try this homemade vegan almond ricotta.
  • Fresh tomatoes - in season tomatoes are best here since they have SO much more flavor. If out of season, I like campari tomatoes which are a smaller size on-the-vine tomato that usually come in a clear plastic container or box.
  • Salt and pepper - I like Maldon flakes here and course ground pepper for texture.
  • Fresh herbs - parsley, basil, or chives, to garnish.

How to make ricotta toast:

Toast: Drizzle your bread with olive oil, place in a preheated cast iron pan, grill pan, or on the grill. Grill both sides, adding more oil if needed, until golden brown.

Top and serve: Layer the toast with ricotta, tomatoes, salt, pepper, herbs and a drizzle of olive oil.

Storage?

This toast is best eaten immediately! If you have leftovers, store each component (ricotta, tomatoes, etc.) separately.

It sure can be! Just use your favorite gluten free bread - I love this one.

Can it be made vegan?

You betcha! Use this vegan almond ricotta which is every bit as luscious and creamy! Or a store bought vegan ricotta.
