What I Ate Wednesday

Hello friends! I am jumping onto this What I Ate Wednesday train. Mainly because I LOVE food and always get a kick out of reading what other people eat in a day. Is it just me?

I always find a new flavor combo or meal that I can't wait to make. It gets my kitchen creativity juices flowing like nothing else!

So without further ado, here are my unedited, iPhone shot, real life photos of what I ate in a day.

Breakfast:

I started the morning off with a big bowl of my Raw Superfood Cereal. I left out the buckwheat, doubled the coconut, and added in some flax seeds. I just pour the cereal into a bowl and top it with milk and blueberries.

It's not quite cold cereal, it's not quote overnight oats, but lives in this very delicious place between the two.

Morning Snack:

Sometimes the thought of making it from breakfast to lunch is just too much!

So, I reached for three brownie Cocoroons and a homemade decaf oat milk latte. Just the right amount of sweet to get me through the morning!

Lunch:

Lunch was leftover rice and panang curry topped with steamed spinach and a fat handful of cilantro. #TeamCilantro4Eva

Afternoon Snack:

Melty peanut butter on warm toast with a pinch of flaky sea salt? What could be better?

Served with a side of sweet berries that could only have been grown this side of winter.

Dinner:

Reed was outta the house, so pasta night was on!

I heated up some of my Freezer Veggie Meatballs in marinara sauce and then served them with chickpea pasta topped with chili flakes and fresh basil. Ten minute dinner to the win.

Dessert:

Not pictured, but I can say with 99% certainty that I probably snacked on a piece of dark chocolate post dinner.
