Baked Cinnamon Apples are a household favorite. They have all the good gooiness of apple pie without the effort of making crust!
Dump all the ingredients straight into your baking dish and 40 minutes later you have perfectly tender apples in a sweet and sticky cinnamon infused sauce.

Ingredients and substitutions:
- Apples - honeycrisp, fuji, and jonathan are great choices. See "Baking Apples 101" below for more options!
- Sugar - granulated or organic cane sugar work best. Use coconut sugar for a naturally sweetened option.
- Cinnamon - ceylon cinnamon is my pick for the best flavor and most health benefits.
- Cornstarch - to thicken up the sauce perfectly.
- Lemon juice - to balance out the sweetness. Use fresh squeezed only!
- Butter - I used Miyoko's brand of vegan butter but any butter you like will work.
How to make Baked Cinnamon Apples:
Slice the apples: Peel and slice the apples into uniform ¼ inch slices. Take note that larger slices will take longer to cook and thinner slices will cook quicker. Peeling the apples gives the smoothest texture, but you can leave the peel on if you'd prefer!
Toss: Add the apples right into your baking dish and toss them with the sugar, cinnamon, cornstarch, and lemon juice until they are evenly coated.
Top with butter: Cut the butter into small squares and arrange them evenly on top of the apples.
Bake: Cover with foil and bake for 30 minutes. Uncover and continue baking until golden and tender.
Storage:
Refrigerate leftover apples in a lidded container for 3-5 days. Serve cold or reheat in the microwave until warmed through.
For longer storage, freeze in a lidded container or freezer bag for up to 3 months. Thaw in the fridge before reheating.
Baking apples 101
When it comes to apples, you want to choose the right variety to use in this recipe. Some apples are too soft and will fall apart during baking resulting in applesauce, not baked apples.
For this recipe, we recommend the following apples:
- Honeycrisp
- Fuji
- Gala
- Jonathan
- Braeburn
- Pink Lady (also called Pink Cripps)
I used all honeycrisp in this recipe, but feel free to use a combination of any of the apples listed above.

Ingredients
- 6 honeycrisp apples, peeled and cut into ¼ inch slices
- ⅓ cup sugar
- 1 ½ teaspoons ground cinnamon
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 3 tablespoons butter, cut into about 10 squares
Instructions
Preheat the oven to 350 degrees.
Add the apples right into your 9x13 baking dish and toss them with the sugar, cinnamon, cornstarch, and lemon juice until they are evenly coated. Arrange the butter evenly on top of the apples.
Cover with foil and bake for 30 minutes. Uncover and continue baking until golden and tender, about 10-15 minutes. Serve warm and enjoy!
Notes
Apples: you can also use fuji, gala, jonathan, braeburn, and pink lady apples with great success! Use all one variety of a mix of several.
