The slurp-able, delectable, silky smooth yogurts of our youth. I hardly ever went a day witout one in my lunchbox. And when we froze them... stop. Just stop. The cold creamy yogurt pop was just too good.

Only, this Drinkable Vegan Yogurt is a health upgrade. It is still smooth, flavorful, and gogurt-esque, but with less of the sugar, preservatives, and dairy. And by less than, I really mean void of. This gurt is free of dairy, soy, sugar, thickeners, and preservatives. Most importantly, it's big on flavor.

This Drinkable Vegan Yogurt recipe steamed from my Artisan Vegan Greek Yogurt, a blog favorite. That recipe can also be made into POPSICLES! Just had to drop that in.

I made this version even more simple by requiring only 3 ingredients: cashews, coconut milk, and probiotics. (An optional, and delicious fourth ingredient is some berries to add flavor,  natural sweetness, and make this Drinkable Vegan Yogurt reminiscent of that lunchbox fave.)

The combination of the cashews and coconut milk give this yogurt extra richness. This won't taste like fat-free yogurt, this Drinkable Vegan Yogurt is full fat, fully delicious, and fully healthy. The fat in this Drinkable Vegan Yogurt is from whole food sources and will keep you full and satiated for hours. Not to mention the silky, melt in your mouth texture, is outta this world.

This three ingredient masterpiece is also easy as pie. And then about 7 steps easier than that. Just soak your cashews overnight and then blend them with coconut milk and probiotics. Pour that mixture into a jar, cover it lightly with cloth so our Drinkable Vegan Yogurt can breathe, and let it sit out on the counter overnight.

Yes. It is finally okay to leave food out on the counter.

While our Drinkable Vegan Yogurt is sitting on the counter overnight, the probiotics are working their magic and turning the base into tangy, probiotic filled, yogurt.

One strange, but really important note: once you stir in the probiotics, do not let any metal touch your Drinkable Vegan Yogurt. That means no metal spoons, forks, knives, straws, bowls, cups, or other metal utensils. Due to some science that is over my head, metal counteracts the probiotics in the yogurt, killing them and leaving your gut hungry for more. Those probiotics are major health boosters and can improve everything from digestion to skin health, so reach for plastic, glass, or wood here.

Description

This 3 ingredient Drinkable Vegan Yogurt is a probiotic rich drink that is full of flavor! The sweet berries combined with the tangy coconut cashew yogurt is the perfect match. This simple method uses only a probiotic capsule and requires no fancy equipment.


Ingredients

Scale
  • 2 cans full-fat coconut milk
  • 1 cup raw cashews, soaked overnight
  • 3 high-quality probiotic capsules
  • 1-2 cups defrosted berries (optional)


Instructions

  1. Drain your soaked cashews and add them to a blender with the coconut milk. Blend until smooth.
  2. Open up the probiotic capsules and pour the contents into a glass bowl. Add in the yogurt and stir it together with a wooden, plastic, or silicone utensil. At this point, it is very important to not let metal touch the yogurt - it will kill the probiotics and prevent them from fermenting your yogurt.
  3. Transfer the mixture from the bowl to a glass jar and cover the top with some cheesecloth and secure it with a rubber band. Let the yogurt sit on the counter overnight, or until desired tanginess is achieved.
  4. The next morning, add your berries to the blender and blend until smooth. Pour the berry puree into the jar and stir to combine, using a plastic, glass, silicone, or wooden spoon. Place a lid on the jar and transfer the mixture to the fridge. The yogurt will keep in the fridge for up to 10 days. Drink as often as desired.

    I'm excited to try this recipe out. I've been curious about making my own yogurt but the process is daunting. This is very doable. Do your have a recommendation for high quality probiotics?

      Hi Stephanie! I think you will find this recipe pretty easy :) I was really intimidated by homemade yogurt for the longest time too! I really like this probiotic. I tested the recipe with a few brands, but this one was the clear winner!

    it's important to note that blending the yoghurt will kill the probiotics as well.

    avoiding metal utensils might be a helpful tip to not stop the fermentation process before it's begun (haven't done the research so don't know if that's true or a myth, I've made plenty of youghurt using metal utensils). But if you're eating it for your gut health, I would avoid blending it after fermentation.
