Socca has stolen my heart, or at least my tastebuds. Which happen to be tied directly to my heart strings. The only string not tied directly to a food item belongs to workout clothes, and maybe puppies. Food, gym clothes, and puppies. #priorities
Right now this Homemade Socca Recipe is monopolizing on my food heart strings big time. I cannot get enough of this tender, flavorful flatbread. Especially when it can be made in 10 minutes flat, requires just 3 ingredients (INCLUDING WATER), and lives in the wonderful place where healthy needs delicious.
Socca is a flatbread made from chickpea flour, a little olive oil, and water. It is unclear whether it originated in France or Italy, but I figure either way, we cant lose. It also goes by the name Farinata, depending on what region in Italy you are in. Whatever the name, order it if you ever stumble across such a splendid fate.
I was first introduced to socca by some good friends of mine who immigrated from Italy. They cooked their grandmother's recipe and I was hooked. I still don't know how such humble ingredients can create such a masterpiece, but somehow, they sure do.
After catching the socca fever, I have been working on this Homemade Socca Recipe. This chickpea flour pancake uses basic ingredients, and is so quick, it can be whipped up for dinner in a jiffy.
Now for the best part.
Ways to eat your Homemade Socca Recipe:
- Straight outta the pan. This may sound overly simple, but I am not sure that anything tops freshly made socca. Hit it with a grind of freshly cracked pepper and dig in. It is best when hot.
- Instead of bread, serve socca with your soup or salad. It is a delicious twist and an even healthier option.
- Use socca as the base of your meal and top it with sautéed veggies and some type of sauce, a mash, or even use it as the base for avocado toast. Dinner is served.

Ingredients
- 2 cups garbanzo bean flour
- ½ teaspoon salt
- ½ teaspoon pepper
- 2 cups water
- 3 tablespoons olive oil
Instructions
- Whisk together the garbanzo bean flour and salt.
- Slowly pour in the water, whisking constantly to avoid lumps. Whisk in the oil. Set the batter aside to firm up for an hour, if you have time, or cook immediately.
- Once the batter has rested, turn the oven onto high broil. If your oven does not broil, preheat it to the highest setting. Using a 8 inch pan or cast iron skillet, pour in enough olive oil to coat the bottom of the pan. Use a paper towel to spread the olive oil around the pan and up the sides. Ladle in ⅛th of an inch of batter and top with some freshly cracked pepper.
- Bake for 3-5 minutes, until the socca has set and is golden brown around the edges. Remove from the oven and remove from the pan. Repeat with the remaining batter.
