It is bright and oh so very sweet with just the right amount of acid to make things interesting. Then it is buttery from good olive oil and a touch of honey is just the trick to mellow everything out and create perfectly balanced flavors.

Skip the fresh tomatoes. They are delicious, and make great jam, but we are upping our game here.

Ingredients
- Ingredients:
- 6 oz sundried tomatoes (not packed in oil)
- 1 ¼ cups water
- ⅔ cup extra virgin olive oil
- 1 tablespoon honey
- 1 teaspoon salt
Instructions
- Add the tomatoes, water, and olive oil to a pot. Cover and simmer until the tomatoes are plump and soft, about 10 minutes.
- Add this to the blender with the remaining ingredients. Blend until smooth. Store in the fridge for up to 2 weeks.
