Eggnog French Toast (gluten free + vegan)

Eggnog French Toast is a secretly healthy and decadent breakfast! An easy Christmas morning recipe with just 7 ingredients!

Christmas time is here! And this week is dedicated to Christmas morning recipes.

To be honest, I've never had a big Christmas breakfast. Our family tradition is to open presents on Christmas Eve. We  huge a huge dinner (and plenty of wine) that night and then we have a slow morning and an early lunch on Christmas day. But the thought of a slow and decadent Christmas brunch in flannel pajamas is just too good to pass up on this year!

And this Eggnog French Toast is just the ticket!

Not only is Eggnog French Toast brimming with holiday flavor, it is actually really easy to make! It requires just 7 simple ingredients, most of which are probably in your pantry right now.

And if you happen to have leftover eggnog in your fridge, you'll most likely have everything you need to get started.

While French toast is truly one of my favorite brunch recipes, I have a bone to pick with this near perfect breakfast.

Everyone has to eat at different times! This might be fine for a casual weekend breakfast. But on a holiday, you want everyone to surround the table at once and dig in together.

My trick for this? Preheat the oven to its lowest setting which should be somewhere in the ballpark of 200 degrees. As you finish cooking each piece of toast, place them in the oven directly on the racks. This not only keeps the french toast warm, placing it directly on the rack keeps it from getting soggy and preserves that perfect golden brown crust.

When making this Eggnog French Toast I often use whole grain bread for a healthier spin. With all the spices and flavor on the eggnog batter, chances are no one will catch that this breakfast is sneaking in some major whole grains.

And when it comes to toppings, with this toast, less is more. A little maple syrup, a dallop of coconut whipped cream, and a sprinkle of cinnamon and nutmeg add richness but let the eggnog flavor really shine.

Description

Eggnog French Toast is a secretly healthy and decadent gluten free and vegan breakfast! An easy Christmas morning recipe with just 7 ingredients!


Ingredients

Scale
  • 8 slices bread (gluten free if needed)
  • 1 cup eggnog
  • 1 tablespoon flax seed meal
  • ½ teaspoon almond extract
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • Pinch salt
  • Avocado OR coconut oil (for frying)

Optional toppings:

  • Whipped coconut cream
  • Maple syrup
  • Extra cinnamon and nutmeg

Instructions

  1. Whisk together all of ingredients except for the bread and oil. Set aside to thicken up for 10 minutes.
  2. Add a glug of oil to a nonstick skillet and place it over medium heat.
  3. Once the oil is hot, take one slice of bread at a time and dip each side quickly in the mixture and then let the excess drip off. Transfer it to the skillet and cook on the first side until golden brown, about 2 minutes. Flip the French toast and cook on the second side until golden. Repeat with the remaining toasts.

Notes

Instead of serving each piece of French toast when it is done, preheat the oven to 200 degrees and place the French toast directly on the oven rack when they are finished cooking in the skillet. When all toasts are ready, you can bring them out to the table all at once and everyone can eat together!

This Eggnog Recipe works great in this recipe! You can also use a store bought eggnog. If you need to keep the recipe soy-free, choose a coconut or almond milk based nog.

For a healthier twist, use whole grain bread in this recipe.
