These garlic green beans are quickly becoming a go-to side dish! They are easy peasy, healthy to boot, irresistibly garlicky, and pair with just about every kind of dinner entree.
As the green beans cook to the perfect crisp-tender texture, the bits of minced garlic fry in the butter turning golden brown, fragrant, and crisp. The cherry on top of these beans!

- They are paleo, easily vegan, keto, and gluten free.
Ingredients and Substitutions:
- Olive oil - or another oil like grapeseed or avocado.

- Garlic - add more or less to taste.
- Salt

How to make this recipe:
Prep the green beans: Some brands, like Trader Joe's, sell the beans already trimmed. If not, line up your green beans, trim off one end. Aim to remove about ¼ inch of the beans. Then repeat with the second side. Continue until all the beans are trimmed.
Sauté: Cook the beans on medium-high heat with the oilve oil until they start to brown and blacken slightly in some parts - this adds great flavor!
Infuse with flavor: Turn the head down to medium low and add in the butter, garlic, salt and pepper. Sauté, stirring often, until the garlic is browned and the beans are infused with their flavor. Serve, topped with the garlic from the pan!
The best skillet for cooking green beans:
You can cook these green beans in any skillet, but the best option, in my opinion, is to use a 12-inch cast iron skillet. It heats evenly and helps to get that irresistible char on the beans like no other pan can. Plus, cast iron is affordable and lasts for years!
What to serve:
These garlic green beans are the perfect accompaniment to so many entrees! Here are some pairing from the blog, but the sky's the limit:
- Lentil Loaf with Butternut Squash
- Acorn Squash with Sage Apple Stuffing
- Baked Tempeh
- 30 Minute Baked Lentil Falafel
- Vegan Ricotta Stuffed Portobello Mushrooms
Leftovers?
Store leftovers refrigerated in a lidded container for up to 5 days. Reheat in the microwave, or a skillet on medium-low heat. If using a skillet, be careful to heat gently so the garlic doesn't burn.
