Beets in your latte. Have I lost my mind?
Jury is still out on that one, but I definitely lost my heart to this perfect pink drink.
While adding vegetables to warm milk may not be the first thing you reach for in the morning, this Beet Latte is sweet, earthy, and floral.
Using a beet powder in this recipe brings out all the sweetness this pink veggie has to offer and removes that signature earthiness that made most of us cringe as kids.

Ingredients and substitutions:
- Milk - I like almond milk, oat, or soy in this recipe, but any milk you like will do the job!
- Maple syrup - or honey, stevia, etc. Use your sweetener of choice.
- Orange zest - a few 2 inch long strips, peeled with a vegetable peeler, add a floral orange note that perfectly compliments the flavor of the beet powder.
- Beet powder - I buy mine online or at a my local health food store. Then I also use it in smoothies or as a natural food coloring alternative.
- Vanilla extract - adds gourmet depth of flavor.
How to make the best Beet Latte:
Heat the milk: Add the milk, maple, and orange zest to a small pot and heat until steaming. Remove the orange zest. If you like a stronger orange flavor, (I do!) remove the pot from the heat and let it steep for 10 minutes before discarding the zest.
Whisk: Add in the beet powder, vanilla, and whisk until combined. You can use a milk frother to get it nice and frothy if desired.

Beets are packed full of natural nitrates which helps your body take on more oxygen at once and gives you a boost in energy. It also improves athletic performance and reduces blood pressure!
Can I add caffeine?
Absolutely! Try one of the following:
- 1-2 shots of espresso per mug. You may need to up the sweetener to compensate for the added bitterness in the espresso.
- 1-2 teaspoons of matcha powder. Again, adjust the sweetness if needed.
- 1-2 tablespoons of cacao powder for a chocolate beet latte with a small boost of caffeine.

- 2 cups unsweetened almond milk
- 1-2 tablespoons maple syrup, to taste
- 1-2 (2) inch strips orange zest
- 1 teaspoon beet powder, more or less to taste
- ½ teaspoon vanilla extract
Instructions
Add the almond milk, maple and orange zest to a small pot over medium heat.
Once steaming, whisk in the beet powder and vanilla extract. Pour into a glass and enjoy!
