These truffle fries have it all! Not only are they seriously EASY but they have robust flavor from truffle oil, the crunch of restaurant fries, and the health benefits of baking them at home!

Ingredients and substitutions:
- Potatoes - russet potatoes or yukon gold potatoes work best in this recipe. And see below for how to use frozen fries!
- Olive oil - or another neutral oil like grapeseed or avocado.
- Cornstarch - helps the potatoes get nice and crispy in the oven. You can also use potato starch.
- Salt - Use a fine sea salt when baking the fries, but then salt flakes or truffle salt for finishing the fries.
- Black truffle oil - adds the most incredible flavor!
- Finely grated parmesan - optional, for serving. Vegan parmesan is great too!
- Chopped fresh parsley - optional, for serving.
How to make truffle fries:
Cut fries: Slice your potatoes into even ½ inch sticks. Potatoes of the same size will cook at the same time. This helps each fry get nice and crispy.
Toss and Bake: Toss the cut potatoes with olive oil, cornstarch, and salt. Arrange in an even layer on the baking sheet and bake for 20 minutes. Flip the fries over to encourage even browning and bake for another 10.
Drizzle and top: Once the fries are done, let them cool on the tray for 1-2 minutes. This helps them cool slightly, making sure the heat doesn't destroy any of the truffle oil flavor. Drizzle generously with truffle oil, sprinkle with flaky salt, parmesan, and parsley.
Black or white truffle oil for fries?
Most recipes, like this one, use black truffle oil on french fries. Black truffle oil has a stronger more robust taste that holds up well to heat, making it the perfect choice for fries!
Feel free to use white truffle oil too, the flavor will be milder, but still delicious.
How to make crispy baked truffle fries:
The trick to crispy baked fries is as simple as a little cornstarch.
Tossing the fries with oil and starch creates a coating on the outside of the fries which then crisps up beautifully in the oven, creating some real crunch!
Shortcut! How to make truffle fries with frozen fries:
This is the best trick for quick and easy truffle fries! Take a bag of your favorite frozen fries, I like Alexia brand, and bake them according to the package directions. Once crispy and golden, let them cool on the tray for 1 minute. Drizzle with truffle oil, sprinkle with salt, parmesan and parsley. Enjoy!

Ingredients
- 2 medium russet potatoes, cut into ½ inch sticks
- 1 ½ tablespoons olive oil
- 2 tablespoons cornstarch
- 1 teaspoon salt
- 1-2 tablespoons black truffle oil
- Optional grated parmesan, sea salt flakes, and chopped parsley, for serving.
Instructions
- Preheat the oven to 450 degrees. Line a baking sheet with parchment paper and set aside.
- Add the fries, olive oil, salt and cornstarch to a bowl. Toss until the fries are coated.
- Spread the fries out on the baking sheet and cook for 20 minutes. Flip the fries over and cook for another 10 minutes.
- Remove from the oven and drizzle with truffle oil and sprinkle with salt flakes, grated parmesan, and chopped parsley. Enjoy!
Notes
Potatoes: You can also use yukon gold potatoes or frozen fries! For frozen, bake the fries according to the package directions and then top with truffle oil and garnishes.
